TWO Scottish restaurants have joined the prestigious Michelin Guide Great Britain & Ireland selection in its June update.

While The Michelin Guide distinctions — Stars, Green Stars and Bib Gourmands — are only revealed at the annual ceremony, the “Inspectors” add restaurants to the selection year-round.

This month The Forager in Dollar and tipo in Edinburgh have been recognised.

Italian tipo - named after the fine Italian '00' flour that’s used for making pasta - is predicted by Michelin to “quickly become your go-to in Edinburgh’s New Town”.

The guide adds: “It’s the seriously good homemade pasta that will catch your eye, but don’t ignore the selection of small plates or you’ll miss out on wonderful dishes like sea bass crudo.”

Dean Banks’ first ever pub The Forager in Clackmannanshire is set over two floors and despite renovation “the local pub has not been forgotten”.

The team takes inspiration from the countryside around them – picking wild garlic by the river and using it on the menu.

The guide describes the menu: “A short menu showcases pub classics and a few more creative dishes. At the heart of it all is good produce, which is brought to life with care and attention, in dishes that have plenty of flavour.”

Banks said he was “incredibly grateful” that the pub was recognised.

The chef added: “I focus on sourcing the best produce and preparing everything in house - its cooking done my way, always.

“The Forager is a pub at heart but definitely has a real gastro side to it for all foodies and tourists in the area. Everything comes from the heart, from the steak pie inspired by my grandad to favourites from my other restaurants but with a premium pub twist.”
