THE team behind a busy Scottish restaurant has ensured the survival of its business by turning two shipping containers into a Covid-compliant outdoor kitchen on the shores of the Moray coast.
The Bothy Bistro’s Bootlegger’s Bothy has served more than 5000 people in the fortnight since it opened. Specialising in fresh, local produce, including fish, mussels and langoustines, the kitchen can be found at Hopeman’s West Beach Caravan Park.
Ruth and Barry Scott, who opened the Bothy Bistro in 2011, said: “We knew the Bistro in its current form would not be viable until restrictions were completely lifted. The Bootlegger’s Bothy combines our superb team with a magnificent location and, thanks to the space in the park, can abide by social distancing rules.”
