A DISUSED biscuit factory is being used to bring distilling back to Scotland’s historic gin port.

Leith once boasted a thriving gin industry renowned for innovation and influencing the development of the London Dry version of the spirit. Now Edinburgh Gin has transformed part of the former United Biscuits plant into their second distillery, in response to rocketing global demand.

The expansion will more than quadruple production capacity, with the new distillery producing enough spirit to make more than 2.5 million gin and tonics per year.

Edinburgh Gin has signed new distribution deals in Europe, Scandinavia and North America for its core range.

The UK is the biggest gin exporter in the world and 70 per cent of it is made in Scotland, in total worth

£1.76 billion to the UK economy. The new distillery will produce the company’s core range of gin – Original, Cannonball and the newly-added Seaside Gin, launched in time for summer 2016.
